Just a quick note on this week as I am in the middle of finals (if there are any organic chem. wizards reading, can I please borrow your brain on Tuesday? It would make my stress level decrease 10 fold) and I haven’t really got the time to write anything out. This week was good though. I made hummus (recipe below), pita chips (aka cut pita, leave in oven @400F for ~10 minutes) and ate subway, a few salads and other healthy like things. All in all a good week!
I hope if you too are suffering from final-itis things are OK, and just think a week or so until freedom!
Hummus
1 can chickpeas (19oz), drain liquid in to a bowl
1 (or 3) clove (s) garlic, crushed/chopped
1 tablespoon oil (olive, or otherwise)
Cumin as you like
Pour chickpeas into a bowl with garlic and oil (and cumin). Break out the hand blender, blend until desired constituency is reached (adding reserved liquid as needed, I normally don’t add much) and enjoy with pita chips!
